So, this recipe is a perfect alternative to a starchy carb, like pasta. Much better than pasta as you have the same appearance however get so many nutrients at the same time! What a bargin?! The other great thing about this recipe is it takes so little time containing very few ingredients. I created this recipe as my little sister used to love pasta (now she’s gluten free, she can’t eat it) however, she feels really left out so I thought I’d create a recipe especially for her. This was when this dish was born! Pesto, tomatoes + cheese personally are the BEST combinations ever and the crunch in the raw courgette really adds to the creamy tomato sauce. If you dairy-free you can just leave the parmesan off the top (I usually leave the cheese off as I can’t tolerate dairy well) Its also a perfect vegetarian option or if you want something slightly lighter for lunch/dinner. If you don’t have a spiraliser then you can buy one of amazon. I hope you enjoy this recipe as much as I do, so enjoy!
Ingredients:
2 courgettes, washed
2 tablespoons of my h/m pesto (recipe on blog)
10 cherry tomatoes, washed
parmesan for grating
4 cloves of garlic
For the tomato sauce: (this will make for than you need)
1 tbsp olive oil
2 onions, chopped
1 thumb-size piece fresh root ginger, finely chopped or grated
2 garlic cloves, chopped
800g tomatoes, briefly whizzed in a food processor or finely chopped
100ml red wine vinegar
2 tbsp tomato purée
seasoning (salt + pepper)
Method:
- Firstly, spiralize the washed courgettes and place aside
- Then for the tomato sauce, place all ingredients in a sauce-pan on a medium-heat + season with salt and pepper
- Meanwhile, chop the cherry tomatoes in half + chop garlic into small pieces
- After approx. 10 -15 minutes the tomato sauce will be cooked
- Stir in enough to the courgetti to achieve a good consistency (the rest of the tomato sauce can be kept in the fridge/freezer
- Add my homemade pesto on top along with the raw chopped garlic + cherry tomatoes
- Finally add a sprinkle of grated parmesan
- Enjoy!
